Only produced in excellent vintages, Berezia, meaning “special” in Basque, is raised on the fine lees with regular battonage for 1 year, and then aged a year further in bottle for added complexity.
Bengoetxe means “come home” in Basque, and that is exactly what Iñaki and Rosa Maria Etxeberria did when they established their tiny estate in 2001. Organic from the beginning, certification came in 2007, the first producer in the Basque Country to do so. Classic and slow wild yeast fermentation takes place in small vats, located in their home garage, and then the wine is raised on the lees up to a year with no batonnage. SO2 is kept to a minimum, and because all CO2 is natural (not injected), the wine does not often show the spritzy character of other Txakolis.
