From the producer-
Without temperature control and without the addition of chemical products. The skins remain in contact for 18 days in open vats, then the racking and pressing is carried out and transferred to fiberglass containers where it matures on its lees for 8 months, naturally decanting, followed by further refinement in the bottle.
