Night Eyes is made from New York State honey, cherries, and apples, which are fermented together for six months before being infused with hand-picked sumac and rose hips. After aging for another six months in wood barrels, this bone-dry mead goes through a second bottle fermentation that produces its lively effervescence. The label features Nut (Nwt); Egyptian Goddess of the sky, stars, cosmos, mothers, astronomy, and the universe. Unfined, unfiltered. NO ADDED SULFUR, VEGETARIAN (CONTAINS HONEY)
Enlightenment Wines has been focusing on small batch meads made with wild yeast, foraged herbs, and locally sourced fruit since 2009. Honey sourced from Western New York region. The beekeeper avoids moving them around for pollination, which is how most beekeepers actually make money. His bees are more relaxed and more healthy, and they make better honey, resulting in higher quality mead.
All ingredients come from New York State. Many are wild-foraged in the Hudson Valley, others are grown by NY farmers we know and trust. All Enlightenment meads are gluten-free and 100% grain-free.
