Composition and harvest location: Holstein Cox apples grown at Scott Farm (Dummerston, VT) and Noiret grapes grown at Folts Farms (Keuka Park, NY).
Production notes: Apple pomace and grape skins co-ferment outside for 7 days. Aged in neutral French oak.
Tasting notes: An homage to what’s left behind when one passion turns into another. An unsuspecting but versatile co-ferment—kind of wine, kind of cider, kind of piquette? Earthy and rustic combination of grape and apple. Oxidative notes of dried blueberries, zante currants, and oolong tea from the vinous side and a light brisk body from the apple. Savory, dry, and surprisingly sessionable. Enjoy chilled in a wine glass.
