Cider with apple, quince, pear, and grape skins. 

Composition and harvest location: Gravenstein and Holstein Cox apples and quince from Scott Farm (Dummerston, VT), Macoun apples estate grown at Rose Hill Farm, and Seckel pears from Montgomery Place Orchards (Red Hook, NY). Grape skins from wines made the same year— Valvin Muscat, Traminette, Cabernet Franc, Cabernet Sauvignon, Petit Verdot. Cabernet Franc from Fjord Vineyards (Milton, NY), Cabernet Sauvignon from North Cliff Vineyards (Cutchogue, NY), Valvin Muscat from Quartz Rock Vineyard (Marlboro, NY).

Production notes: Multiple long macerations of apple pomace with freshly pressed grape skins and a touch of pears & quince, across multiple harvest years. Pressed, fermented and aged in neutral French oak barrels. Bottle conditioned with fresh apple juice and aged for an additional year. 

Tasting notes: Deeply complex co-ferment that intentionally leaves you wondering if it’s wine or cider (and if it matters at all)? Serve slightly chilled in a wine glass.
