Ice cider!

Composition and harvest location: Equal parts Ben Davis and Northern Spy from Tree Crisp Orchards (Wolcott, NY) and Honeycrisp from Rose Hill Farm.

Production notes: First we froze three tanks of apple juice (one each of Ben Davis, Northern Spy, and Honeycrisp), extracted the sweet concentrate that remains unfrozen, and barrel aged for 3 years.  

Tasting notes: Best as aperitif or digestif. Rich, caramelized apple flavors with a unique combination of bright acidity and umami reminiscent of ponzu. Oxidized and very sweet, with rich tannins.
