Composition and harvest location: 100% estate-grown heirloom and bittersweet apples: Ashmead’s Kernel, Baldwin, Belle de Boskoop, Bramley’s Seedling, Calville Blanc, Espous Spitzenberg, Golden Pippen, Golden Russet, Grimes Golden, Harrison, Holstein Cox, King David, Margil, Newton (aka Albemarle) Pippin, Red Byrd Bitter, Zabergau Reinette, and Northern Spy.

Production notes: Apples aged to peak maturation and macerated for 24 hours before pressing. Bottled pétillant naturel. Not disgorged. No added sulfur. 

Tasting notes: Bright notes of lively citrus and a tropical finish. Fruity but dry. Notes of bright starfruit, lemon curd, white grapefruit, thyme, and marjoram.  Serve slightly chilled in a wine glass.
