This side project was started by Géraud Fromont after several incredibly small harvests in the Jura. He sources organic grapes from his friends in other regions and vinifies them into playful wines. This cuvée comes from Auxerrois & Pinot Blanc planted on limestone in Alsace.
The vines were planted in 1978 on Limestone. The grapes are whole cluster pressed into stainless steel. When the juice reaches 21 g/L of residual sugar it is chilled, racked, and bottled. This naturally sparkling wine was disgorged in June.
