This cuvée is made from a rare biotype of Savagnin called Savagnin Muscaté which, as the name suggests, is much more aromatic. The vines are over 60 years old and are planted in the region’s classic marl and limestone. The grapes are direct pressed into stainless steel for fermentation and élevage to retain aromatic intensity. The wine is bottled unfined and unfiltered with minimal sulphur.
